Mom’s Chili

It’s full of beans. Cheddar cheese and Fritos are a hard requirement.

Ingredients

  • 4 cans of dark red kidney beans, drained and rinsed
  • 4 cloves garlic, chopped
  • 2 cans tomato soup
  • 1 can Italian style chopped tomatoes
  • 1 lb ground beef, optional
  • Paprika (2 tsp)
  • Cumin (2 tbsp)
  • Chili powder to taste
  • Oregano (2 tbsp)
  • Brown sugar (2 tbsp at least or until somewhat sweet)
  • Salt to taste (2 tsp)
  • Pepper (1 tsp)
  • Shredded cheddar cheese for topping
  • Fritos for topping

Step 1 – Sautee The Goods

In a large pot, sautee onions over medium heat with unsalted butter. If you are also cooking ground beef, add it with the onions.

Add garlic when onions are translucent.

Step 2 – Add The Goods

Add kidney beans, tomato soup (also add just 1 can of water total), and chopped tomatoes. Next, add all the spices.

Bring to a boil, then bring to a simmer.

Step 3 – Serve
