Tofu Fried Rice (One-pan recipe)

Very filling and yummy.

Ingredients (for three servings)

  • 2 cups cooked rice (cold, day old rice recommended. If making fresh, freeze cooked rice for an hour then use)
  • 2 eggs
  • One pack of tofu
  • ¼ cup frozen peas (more if u like veggies)
  • ¼ cup frozen carrots diced (more if u like veggies)
  • Small onion finely diced
  • 4 cloves garlic minced (more is better 😈)
  • Vegetable oil (small dash each time you fry stuff)
  • Butter
  • 4 tablespoon regular soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper

Instructions

  1. Take rice and ensure it is broken up and put aside.
  2. Cut tofu into ½ inch cubes and set aside. Prepare vegetables as well.
  3. Use just one pan and make scrambled eggs with the 2 eggs mixed with a teaspoon of sesame oil and a tablespoon of soy sauce. Once cooked, set aside.
  4. Fry your tofu using vegetable oil til most sides are fried and crunchy.
  5. Cook the onion, peas, and carrots until the onions are translucent, then add garlic. Leave this in the pan.
  6. Add rice, lots of butter (at least a few tablespoons), quite a bit of soy sauce to taste (at least a few tablespoons), dash of sesame oil, salt, pepper, and mix it all up until the rice fries.
  7. Add back in tofu and egg and mix again. Then serve!
